A grape variety we are particularly fond of and which is used in the blending of our cuvées. Thomas (AOC Vacqueyras). When our first vinifications were launched, this grape variety was harvested at the beginning of October with degrees of 12.5°. This year, it will be harvested next week (mid-September 2023) with a degree closer to 13.5°.
In the cellar, the Grenache Blanc and Roussanne are already in barrel and alcoholic fermentation is nearing completion. These two grape varieties were picked at the end of August before the rains. As for the clairettes, they took advantage of the cool, wet weather to complete their ripening.
As the weather has returned to high temperatures, they will be harvested next week.
