Terroir
Soil: mainly sand and clay. This is a small area in the Châteauneuf-du-Pape appellations, with no rolled pebbles. This zone adds finesse and elegance to the wine.
Climate: Mediterranean, hot and dry, the region is windy and the mistral keeps the leaves and vines dry after the rains.
Winemaking
The grapes are harvested by hand and sorted on arrival at the winery.
The grapes are destemmed and crushed, then placed in concrete vats for fermentation. This is a spontaneous fermentation, without the use of industrial yeasts. Long maceration of 3 weeks at 30°C with short pump-overs.
Ageing for 18 months in vats.
Bottled under neutral gas and with a low quantity of SO2.
Vintage 2019
Notes of black plum, blackberry and eucalyptus. On the palate dark chocolate ganache, the garrigue, coffee with velvety tannins.
