80% Grenache and 20% Syrah
Old vines of Grenache in Gobelet, Syrah in cordon of Royat.
Terroir
The deep, stony, clay-limestone soils of the garrigue provide good rooting and resistance to drought.
Winemaking
Hand harvest for the Grenache and mecanical ones for the Syrah
Separate vinification in stainless steel vats. Macerations for 3 weeks with pump overs at the start of fermentation for gentle extraction – fermentation with native yeasts. Blended before barreling for aging in 225 liter barrels of 3 and 4 wines.
Bottled under neutral gas and with little SO2 for a better respect of the product.
Vintage 2021
A challenging vintage marked by an intense frost spell between 6 and 8 April (down to -6°). Small crop and staggered ripening requiring several harvests. A fresh, fruity vintage, ready to drink.
Food and wine pairing
Will perfectly pair with grilled Mediterranean vegetables such as peppers, eggplant, zucchini or roasted meats, lamb cooked with rosemary.
