Grape varieties

Roussane 50% – Clairette 40% – Grenache blanc 10%

Terroir

Soil: mainly sand and clay.
Climate: Mediterranean, hot and dry, with the Mistral wind allowing the vines to dry out well after periods of rain.

Winemaking

Gentle pressing, spontaneous fermentation without the addition of yeast.

Vinification in concrete vats with fine lees. No barrel ageing to give the wine its purest varietal expression.

Bottled under neutral gas and with little SO2 for a better respect of the product.

Vintage 2021

The 2021 vintage is a late vintage due to the frost which postponed the maturity. Small harvest too. The wine is fresh with reasonable alcohol levels.

Food and wine pairing

We tried this cuvée with green asparagus risotto and roasted scallops, and it was delicious!
