Winemaking
The grapes are destemmed and kept at a low temperature at the start of fermentation. Extraction is gentle, with a few punch-downs at the very start of fermentation, followed by light pumping over at the end with stirring under the skins to help the yeasts finish fermenting the sugars and to coat the tannins; maceration lasted 4 weeks. Matured in concrete vats.
Millésime 2024
2024 was (once again) a very contrasting vintage: early spring was marked by a spell of frost, which led to crop losses in the late-ripening areas of the Ventoux appellation. Spring was then rainy, leading to pressure from fungal diseases, particularly mildew. The hot, dry summer gave way to a rainy autumn, which limited the progression of ripeness, resulting in wines with moderate alcohol levels and rather high acidity.
The nose is intense with notes of cherry and fresh red fruit, mingled with slightly spicy notes of clove and a finish of balsamic notes. The palate is round, with supple, silky tannins. This wine is full-bodied with good length and is full of ripe red fruit notes on the finish.
Food and wine pairing
Here are some ideas for dishes we've already cooked and tested with this wine : tapas, a navarin of lamb or a spelt and carrot risotto... with creamy gorgonzola cheeses or small goats' cheeses, it's a delight!
