Loess soil on the hills of Larnage, to the north of the appellation.
South-west exposure.

Winemaking

The grapes are harvested by hand, de-stemmed, crushed, fermented with indigenous yeasts and left to macerate for a month, with delestage at the start of fermentation, followed by gentle punching of the cap and stirring of the lees at the end of fermentation, for gentle extraction and fine, round tannins. Aging in 600-liter demi-muids and 228-liter second-hand barrels helps to coat the tannins without adding woody aromas.

Vintage 2021

This was a vintage that required a lot of hard work and attention, with an exceptionally intense Spring frost on 8 April, followed by a particularly wet Summer, leading to difficulties in ripening the grapes, low alcoholic degrees and poor phenolic ripeness. The contrast with the previous vintage, 2020, which was early and sunny, is very marked: 2021 is much finer, with freshness and finesse.

This cuvée paris well with 7-hour lamb or prime rib cooked with rosemary.
