Gentle direct pressing, cold settling, maceration, filtration and blending of the lees. Fermentation at low temperature in stainless steel vats.
Vintage
Vintage 2023 was very contrasting, with a very dry winter, a very rainy spring, then a summer that ended with a long and intense heatwave, which had a significant impact on ripeness, particularly for white wines; the cool terroir of Escartefigue helped to temper this excess and preserve fresh and intense aromas.
Made from two aromatic and complementary grape varieties, the Sauvignon brings freshness and notes of exotic fruit, while the Viognier adds roundness and notes of ripe fruit such as peach and apricot. The touch of Muscat adds further complexity, with floral notes.
Vintage 2024 was more traditional in terms of ripeness, with fresher and lighter wines. Spring was very wet (until June), causing a slight delay at the start of the season. Summer temperatures were warm without being excessive, promoting the development of fresher aromas.
Sauvignon brings notes of exotic fruits. Viognier has more subtle aromas but adds a pleasant bitterness on the finish, creating a dynamic palate. This vintage is a light, slightly salty, elegant and fresh wine.
